Chef’s hat on and here we go…Pro tip: read the full method before you start because a few things need to happen at the same time while you’re cooking. Avocado, poached egg & spinach recipeFancy a change from our Grab & Go breakfast (don’t worry, we won’t be offended)? Serves 1 (just multiply to serve more!) Prep: 5 mins Cook: 5 mins Ingredients: 1/2 avocado 1 tbsp vinegar 1 large organic egg A knob of butter 100g of washed spinach 1 English muffinMethod:1. Peel and stone the avocado, pop it into a bowl and smash it up using a spoon. Set aside.2. Bring a small saucepan of water to the boil and add the vinegar (this stops your egg white from breaking up). Crack the egg into the pan and poach for 2 and a half minutes. 3. Meanwhile, heat the butter in a frying pan and once that’s melted, throw in the spinach to wilt. This will only take a minute.4. While you’re poaching and wilting, half the muffin and stick it in to toast.5. Top the muffin with the avocado, spinach and egg, and then season to taste.Downright delicious!
