Avocado, poached egg & spinach recipe

Serves 1 (just multiply to serve more!) 

Prep: 5 mins 

Cook: 5 mins 

Ingredients: 

  • 1/2 avocado 
  • 1 tbsp vinegar 
  • 1 large organic egg 
  • A knob of butter 
  • 100g of washed spinach 
  • 1 English muffin

Method:

1. Peel and stone the avocado, pop it into a bowl and smash it up using a spoon. Set aside.

2. Bring a small saucepan of water to the boil and add the vinegar (this stops your egg white from breaking up). Crack the egg into the pan and poach for 2 and a half minutes. 

3. Meanwhile, heat the butter in a frying pan and once that’s melted, throw in the spinach to wilt. This will only take a minute.

4. While you’re poaching and wilting, half the muffin and stick it in to toast.

5. Top the muffin with the avocado, spinach and egg, and then season to taste.
